Low Carb Seven Bone Roast With Fresh Herbed Gravy

A diet low in carbohydrates is most effective than a any diet which is low in fat. Low Carb diet helps in reducing saturated fatty acids. The Low Carbohydrates diet encourages cholesterol control, weight loss, and is also good for blood pressure control and reduces blood glucose for diabetes and pre-diabetes conditions.

Below is a Low carb recipe for your dieting.
Seven Bone Roast With Fresh Herbed Gravy Recipe
You will need following material in order to cook this meal, it is low carb and tastes great!

  • 4-5 lb 7-bone roast (choose one as marbled as you can find)
  • 2 cans Swanson Low Sodium Chicken Broth (must be low sodium)
  • 2 cans Swanson Low Sodium Beef Broth (must be low sodium)
  • 2 cups red wine
  • 1 fresh sprig Marjoram
  • 1 fresh sprig Thyme
  • 2 Tbsp cold butter
  • Freshly ground pepper
  • 2 Tbsp peanut oil or lard (for high temp frying)
  • Xanthan gum

Place your pot on high and add the oil. The pan should be smoking before you put the meat in. Sear for 5 minutes and then flip over and sear second side for another 5 minutes.

As soon as the meat is browned on both sides, turn the flame down to a low simmer, add all cans of broth, fresh herbs and pepper. And don’t bother chopping those herbs, just throw them in whole. Place a cover over the pot and let simmer for 2 hours.

After 2 hours, remove the lid, add little wine, and continue simmering to evaporate the liquid and concentrate the flavors.

Check now and then to be sure the liquid hasn’t evaporated completely away. You want it to reduce, but not disappear. As soon as the meat is falling apart tender, remove from pot and set aside. Continue reducing liquid if necessary. Depending on the size and tenderness of your meat, this whole process will take approximately 3 hours.

Now to make a gravy Taste your reduced liquid to check the seasonings. If it appears too salty, it has reduced too much. Add a little more low sodium chicken broth or water and add more pepper if desired. Once the seasoning has been adjusted , use your blender to thoroughly mix in the xanthan gum. Drizzle the xanthan gum in little by little. Start with 1/4 teaspoon, blend for 2 minutes and check consistency. Repeat this process until you obtain the desired thickness.
